Peruvian Chicken

This is one of our all-time favorite recipes! We often place a bit of rice into a pasta bowl, add some pre-packaged coleslaw mix (veggies only) over the rice, drizzle on some of the Green Aji Amarillo sauce, then place the chicken on top. Make sure to bring some extra Green sauce to the table to use for dipping the chicken!

  1. While you don’t have to spatchcock the chicken, it’s highly recommended because the meat cooks faster and more evenly.  To spatchcock, cut along both sides of the backbone and remove.  Turn chicken over and now the chicken will lay flat.  I usually line a cookie sheet with foil, spray lightly with cooking spray, and then lay out the spatchcocked chicken.
  2. In a small bowl, mix together the avocado oil, Aji Amarillo paste, lime juice, minced garlic, kosher salt, cumin, oregano, black paper and aji. 
  3. Pat the chicken dry with paper towels, and brush on the marinade.  Let the chicken sit at room temperature for 1 hour.  Alternatively, you can marinate the chicken, cover with foil or plastic wrap, and place it in the refrigerator for up to 24 hours.
  4. Preheat the oven to 425° F. 
  5. When the oven is at temperature, roast chicken for 40 to 55 minutes, checking with meat thermometer around the 40 minute mark.  Chicken will be done when the breast registers 160°.
  6. After removing from the oven, let rest for 5 to 10 minutes before carving.

Ingredients for Green Aji Amarillo Sauce

  • 3 whole jalapeno chiles – washed, seeded and roughly chopped
  • 1 to 1.5 tablespoons Aji Amarillo paste
  • 1 cup fresh cilantro leaves
  • 2 medium to large cloves garlic
  • 1/2  cup mayonnaise
  • 1/4  cup sour cream
  • 2 teaspoons fresh lime juice
  • 1 teaspoon distilled white vinegar
  • 2 tablespoons avocado oil or neutral tasting olive oil
  • Kosher salt, freshly ground black pepper and Ajinomoto / MSG to taste

Instructions

Combine all ingredients in a blender, and blend until smooth, scraping down the sides periodically.  After the sauce is well-blended, it will be pretty loose.  Place in the refrigerator and it will thicken as it sits.
